
Lets start this story as late as possible, and fill in with exposition later. I am working as a baker at a local vegan restaurant, that caters to raw and gluten free customers. And doesn’t have an extensive menu of desert offerings. So I get to make Raw Gluten Free Vegan Deserts. At school as hard as I tried to get involved in pastry there was a big divide between us and as I called them “The Beautiful Pastry People.” I got a week of Baking methods, and a grand total of zero training for what I am doing. I would have only been slightly better off if I were to have been one of the Beautiful pastry people.
So I am going in to this with the training of an interested home cook, and a classical French technique based background in Cuisine. I've been doing the job for two months now, and I am realizing that I am still way outside of my comfort zone.
I am a writer, with a story to tell, and food is my medium. Too often now the story I am telling is I don't know what I am doing. In this economy making, and eating my contribution to the menu needs to be a dance.
